Almond pie crust

Super-easy gluten-free pie crust for pumpkin pies and cheesecakes.


Ingredients:

  • 2 heaping cups almond meal
  • 1/2 cup butter
  • 1/3 cup brown sugar
  • 1/3 cup granulated sugar
  • 1/2 teaspoon vanilla extract
  • a few dashes of cinnamon
  • Pinch of salt


Directions:

  1. Combine all of the ingredients to form a sticky dough.
  2. With moist fingertips, press the dough into 2 8-inch glass pie plates.
  3. Bake the crust at 350 degrees F. for 20 minutes if using a no-bake filling. Allow to cool completely before filling.
