Banana bread

Easy gluten-free banana bread! Amaze your friends! You won't miss the gluten, trust me!
Here is a great banana bread recipe. It's super easy, since you use baking mix and a breadmaker (on the Quick Bread setting). And it's a fact: Even gluten eaters love it (I had friends begging me for more and asking if they could have some to take home)! They won't notice the gluten's gone if you don't tell them. ;)
Like I said, I make it in my breadmaker, but you can also bake it in a loaf pan in the oven. The original recipe I adapted this from said 350 for 55-65 minutes, but you would have to keep an eye on it because I've never done it this way myself after de-glutening it. You can probably also add nuts if that's your thing, but I don't like 'em, so I don't!
Using butter instead of oil makes the bread darker. Not that much difference in taste or moisture, but I think I might like the butter version juuuuuuust a bit better.
Ingredients:
- 3 overripe bananas
- 3 eggs
- 1/3 cup vegetable oil or melted butter
- 1/2 teaspoon vanilla extract
- 1 cup white sugar
- One box Gluten Free Pantry Muffin mix
Directions:
- Mash up bananas and throw in breadmaker.
- Lightly beat eggs and throw in breadmaker.
- Measure oil (or butter), vanilla, and sugar, and throw each into breadmaker.
- Dump box of muffin mix into breadmaker.
- Set breadmaker to "Quick Bread" setting and turn on.
- After it mixes for a few minutes, I'll usually churn things up myself with a spatula to make sure there aren't any pockets of dry flour anywhere.
- Let the breadmaker do its magic!
Once the bread is finished: If you are keeping it for later: Wrap it in plastic immediately and put it in the fridge. Wrapping it will prevent evaporation, and will prevent the bread from getting dry. If you are eating it warm: Let sit for a few minutes (maybe 10) before cutting, since you don't want the steam to escape and make the bread dry.
