Beef Paprika

Beef Paprika over egg noodles

This is an old Hungarian recipe passed down from my great-grandmother. It's a great cold-weather dish.

Ingredients

  • 1/4 cup shortening
  • 1 T. brown sugar
  • 2 lbs beef chuck or round, cut into 1” cubes
  • 2 tsp salt
  • 1 cup onion sliced
  • 2 tsp paprika
  • 1 small clove garlic, minced
  • 1/2 tsp dry mustard
  • 3/4 cup catsup
  • A dash cayenne red pepper
  • 2 tbsp Worcestershire sauce
  • 1 1/2 cups water

After cooking

  • 2 tbsp flour
  • 1/4 cup water

Directions

  1. Melt shortening in large skillet.
  2. Add meat, onion & garlic; cook and stir until meat is brown and onion is tender.
  3. Stir in catsup, Worcestershire sauce, brown sugar, salt, paprika, mustard, cayenne and 1 1/2 cups water.
  4. Cover and simmer for 2 to 2 1/2 hours.
  5. After simmering, blend flour & 1/4 cup water; stir gradually into meat mixture.
  6. Heat to boiling, stirring constantly.
  7. Boil and stir 1 minute.

Serve over egg noodles.
