Burritos

These burritos may not be truly authentic, but they are easy to make and taste great.
Ingredients
- 1-1.5 lb ground beef, ground turkey, OR chicken
- 2 cups uncooked rice
- 1 30oz can black beans (or 2 15oz cans)
- 1 TACO seasoning packet
- 2 cups shredded cheese
- 1 16oz jar of salsa
- 8 large (10"+ diameter) flour tortillas.
Directions
- Begin cooking rice as per directions on package.
- Brown ground beef or turkey in a large skillet. Drain. If using chicken, cook and then cut into 1" cubes.
- Return meat to skillet. Add beans (including liquid from the can), seasoning packet, and water. Add enough water to fully dissolve seasoning packet. Mixture should be soupy. Put on high heat. Can also add a few dashes of your favorite hot sauce at this point.
- When rice is done, add to skillet. Add water if necessary to allow proper mixing.
- Stir while simmering until excess water boils off and burrito mix is moist without being soupy. Remove from heat.
- Place tortilla(s) on plate and microwave 30-60 seconds.
- Place generous amount of salsa in a line on the tortilla. Put ~1/4 cup shredded cheese on the salsa. Spoon burrito mix onto salsa.
- Fold tortilla, and enjoy.
Makes 8 servings.
Notes
- Unused burrito mix can be stored covered in the refrigerator. To reheat, simply add some water, mix while heating until excess water evaporates.
- I find that the type of salsa that tastes best on these burritos isn't necessarily what tastes best with chips. Experiment with different salsas till you find what is best for you.
- Adding the salsa to the tortilla first ensures that the salsa will not leak through, as all the folds and openings will be on the top. Also, the salsa will keep your hand cool, as the burrito mix may be hot.
- Feel free to add other toppings, such as sour cream. Any liquid toppings should be added to the bottom like the salsa.
- Make sure you use a Taco seasoning packet. The burrito seasoning packets taste horrible, and should be avoided at all costs.
