Chicken Chutney Curry

A delicious curry dish.
Ingredients
- 1 tbsp oil
- 1 tbsp curry powder(hot, medium or mild)
- Chicken Breast
- Basmati rice
- 1/2 cup plain yogurt or sour cream
- 1 cup chicken stock
- 1/3 cup mango chutney
Directions
- Cut chicken into 1/2" cubes
- Mix oil, curry and chicken and cook until the chicken is cooked through
- Set aside chicken
- Mix chicken stock and chutney in saucepan
- bring stock/chutney mixture to a boil until reduced in volume by half
- Let mixture cool until it has stopped boiling and add yogurt or sour cream
- Add cooked chicken
- Serve over rice
Serves 3-4 (dependent on portions)
