Chickpea Salad Sandwiches

Ingredients
- ~2 cups of chickpeas (home-made tastes way better than canned, but canned works in a pinch)
- 2 tablespoons Vegenaise or other mayo
- 3-4ish tablespoons of dill pickle relish or self-chopped dill pickles (or if you've got defective taste buds, use sweet relish)
- Dash of salt and pepper
- Small dash of cayenne pepper (if you can taste it you've used too much, but it really helps the flavor)
- Optional: Chopped onion (green or white) or celery or alfalfa sprouts
Directions
- Mash the chickpeas with a fork. You're not trying to make mashed potatoes, but there shouldn't be any whole beans either.
- Mix in the mayo and pickles, and anything else you might to add.
- Sprinkle just a tiny bit of cayenne into the mix with the salt and pepper.
- Spoon onto bread (nutty whole wheat works particularly well) or pita and if you like spicy, sprinkle on a bit more cayenne.
- Top with alfalfa sprouts if desired.
Makes enough for at least 3 large sandwiches, and the mix keeps well in the fridge for at least 2 days.
