Chili

This chili will probably cause some purists to cringe, but I was going for healthiness and ease of cooking while still tasting great.

Ingredients

  • 20 oz ground turkey
  • 1-2 medium onions
  • 1 lb celery
  • 8 15oz cans kidney beans
  • 4 15oz cans diced tomatoes
  • 1 12oz can tomato paste
  • 2 chili seasoning packets
  • Various spices including chili powder, cumin, paprika, and cayenne pepper
  • Small amount of oil

Optional:

  • Peppers such as jalapeƱos and habaneros
  • Shredded cheese
  • Sour cream


Directions

  1. Chop onions and celery. Cook over high heat stirring frequently with a small amount of oil.
  2. When onions and celery have softened, add ground turkey and stir while heating until fully cooked.
  3. Add cans of tomatoes and seasoning packets. Add some water if too thick.
  4. Season with spices to taste. Add chopped peppers if desired.
  5. Simmer for ~15 minutes then add kidney beans and tomato paste.
  6. Adjust seasonings to taste.
  7. Simmer until desired consistency is reached, stirring occasionally.
  8. Spoon into bowls, top with cheese and/or sour cream to serve.

Makes 12 servings.

Notes

  • Chili can be divided into containers and stored in the refrigerator or freezer.
  • Dried beans and fresh tomatoes can obviously replace the canned variety in this recipe.
  • When adjusting the heat level of your chili, especially at the early steps, factor in that much of the water will boil off causing the chili to become hotter over time. Save final heat adjustment till the very end.
