Coconut Mashed Yams

Ingredients

  • 3 large garnet yams, peeled
  • 1 tsp canola oil
  • 3-4 cloves garlic, minced
  • 1 tsp dried thyme
  • 1/4 tsp nutmeg
  • 1 tsp salt
  • 1/2 c. coconut milk

Preparation

  1. Slice yams into 2-inch cubes and store in cold water until ready to cook.
  2. Bring 3 quarts water to a boil, add the yams, and boil, covered, for 15 minutes or until yams are soft and easily crushed with a fork. Drain the yams in a colander and leave them there for 5 minutes.
  3. In a small saute pan over medium heat, heat the oil and add the garlic and thyme. Saute for 1 minute, or until garlic is golden. Remove from heat.
  4. Add the drained yams, nutmeg, salt, and 1/4 cup of the coconut milk. Mash with potato masher until smooth. If the mash is overly stiff or lumpy, ass the remaining 1/4 c cocont milk.
