Coconut Mashed Yams

Ingredients
- 3 large garnet yams, peeled
- 1 tsp canola oil
- 3-4 cloves garlic, minced
- 1 tsp dried thyme
- 1/4 tsp nutmeg
- 1 tsp salt
- 1/2 c. coconut milk
Preparation
- Slice yams into 2-inch cubes and store in cold water until ready to cook.
- Bring 3 quarts water to a boil, add the yams, and boil, covered, for 15 minutes or until yams are soft and easily crushed with a fork. Drain the yams in a colander and leave them there for 5 minutes.
- In a small saute pan over medium heat, heat the oil and add the garlic and thyme. Saute for 1 minute, or until garlic is golden. Remove from heat.
- Add the drained yams, nutmeg, salt, and 1/4 cup of the coconut milk. Mash with potato masher until smooth. If the mash is overly stiff or lumpy, ass the remaining 1/4 c cocont milk.
