Coconut Chicken Or Shrimp

Makes 8 servings.
Ingredients:

  • chicken breast, no skin, no bone, cubed
  • OR shrimp
  • eggs
  • 1 cup bread crumbs
  • salt, pepper and thyme
  • 1 cup shredded coconut meat

Dipping Sauce:

  • 3 parts saucy Susan
  • 1 part grape jelly

Directions:
add salt, pepper and thyme to eggs and beat. Coat chicken/shrimp with egg mixture. Mix bread crumbs and coconut in plastic bag. Add chicken/shrimp to bag and shake to coat. Cook in hot oil.
