Coconut Chicken Or Shrimp
Makes 8 servings.
Ingredients:
- chicken breast, no skin, no bone, cubed
- OR shrimp
- eggs
- 1 cup bread crumbs
- salt, pepper and thyme
- 1 cup shredded coconut meat
Dipping Sauce:
- 3 parts saucy Susan
- 1 part grape jelly
Directions:
add salt, pepper and thyme to eggs and beat. Coat chicken/shrimp with egg mixture. Mix bread crumbs and coconut in plastic bag. Add chicken/shrimp to bag and shake to coat. Cook in hot oil.
