Crock pot North Carolina BBQ

This is a rather simple recipe, but it tastes quite good, and doesn't take much effort for the amount of food it produces.
Ingredients
- 1 3-4 lb. Boston Butt or Shoulder roast (pork)
- ¾ cup apple cider vinegar
- salt and pepper to taste
- 1-1 ½ cups barbecue sauce (I prefer Sweet Baby Ray's, but it's up to you)
Directions
- Trim the excess fat from the roast.
- Season the bottom moderately with salt and pepper.
- Place the roast in the crock pot.
- Cook covered on low for 10-12 hours until the roast is tender and falling apart.
- Discard cooking liquid.
- Shred the roast into small pieces, add barbecue sauce until meat is moist and stir.
I end up using more barbecue sauce then the recipe calls for, but your mileage may vary.
