Crock pot North Carolina BBQ

This is a rather simple recipe, but it tastes quite good, and doesn't take much effort for the amount of food it produces.

Ingredients

  • 1 3-4 lb. Boston Butt or Shoulder roast (pork)
  • ¾ cup apple cider vinegar
  • salt and pepper to taste
  • 1-1 ½ cups barbecue sauce (I prefer Sweet Baby Ray's, but it's up to you)

Directions

  1. Trim the excess fat from the roast.
  2. Season the bottom moderately with salt and pepper.
  3. Place the roast in the crock pot.
  4. Cook covered on low for 10-12 hours until the roast is tender and falling apart.
  5. Discard cooking liquid.
  6. Shred the roast into small pieces, add barbecue sauce until meat is moist and stir.

I end up using more barbecue sauce then the recipe calls for, but your mileage may vary.
