Crockpot Chicken and Sausage Jambalaya

Ingredients

  • 1 link hot italian sausage
  • 1 link andouille sausage
  • 2 chicken thighs
  • 1/2 medium white onion
  • 3 green onions
  • 4 cloves garlic
  • 5oz frozen cut okra
  • red wine
  • 1 can 14oz diced tomatoes (unsalted)
  • 3oz tomato paste (1/2 can)
  • spices to taste

This recipe fill nicely fit a 1.5Qt crockpot and will feed 2-3 people.

Preparation

  1. chop onion, green onion, mince garlic.
  2. remove all excess fat/skin from chicken thighs
  3. prepare sausage as detailed below

Directions

  1. Precook sausage. I know this is kind of unusual for a crockpot dish, but it's completely necessary to do. If you don't precook the sausage your finished product becomes unbelievably greasy. To prepare sausage, boil links under a low boil in a small pan for 15 minutes. Remove from heat, toss water, reduce heat to medium, and place pan over heat to dry out while you slice the links into 1/4"(or whatever size you want) thickness. Cook under medium heat for 5-6 minutes, then drain sausage on paper towels.
  2. Dump onions, garlic, tomatoes(undrained), tomato paste, frozen okra into crock. Mix.
  3. Dump spices into crockpot. I use salt, black pepper, paprika, cumin, chili powder, worcestershire sauce, and a little asian chili garlic sauce to give it some heat. But uh, use whatever you like to taste. Mix.
  4. Dump sausage and chicken into the crockpot and mix. Add splash of red wine.(how much wine I add depends on how much room is left in the pot at that point.)
  5. cook either on high heat for 5hrs, or low heat 8-9hrs.

Serve over rice.
