Egg and Sausage Scramble

A classic dish my mom always made for Christmas
Serves 8
Ingredients
- 1 Lb pork sausage
- 12 eggs
- 1½ cups milk
- 1 tsp. salt
- 2 cups (8 oz.) shredded cheddar cheese
- 2 cups croutons
- Garlic and onion to flavor
Directions
- Cook sausage until light brown; drain off fat
- Place crumbled sausage in greased 12" x 8" pan
- Beat eggs+milk+salt
- Stir in cheese
- Pour egg mixture over sausage
- Sprinkle with croutons
- Bake uncovered until knife inserted into center comes out clean
- Let stand 5 minutes before slicing & serving
Notes
To increase recipe, use 13" x 9" pan and make ingredients:
- 1½ lb pork sausage
- 18 eggs
- 2 cups milk
- 1½ tsp salt
- 3 cups (12 oz.) shredded cheddar cheese
- 3 cups croutons
