Egg and Sausage Scramble

A classic dish my mom always made for Christmas
Serves 8

Ingredients

  • 1 Lb pork sausage
  • 12 eggs
  • 1½ cups milk
  • 1 tsp. salt
  • 2 cups (8 oz.) shredded cheddar cheese
  • 2 cups croutons
  • Garlic and onion to flavor

Directions

  1. Cook sausage until light brown; drain off fat
  2. Place crumbled sausage in greased 12" x 8" pan
  3. Beat eggs+milk+salt
  4. Stir in cheese
  5. Pour egg mixture over sausage
  6. Sprinkle with croutons
  7. Bake uncovered until knife inserted into center comes out clean
  8. Let stand 5 minutes before slicing & serving

Notes

To increase recipe, use 13" x 9" pan and make ingredients:

  • 1½ lb pork sausage
  • 18 eggs
  • 2 cups milk
  • 1½ tsp salt
  • 3 cups (12 oz.) shredded cheddar cheese
  • 3 cups croutons
