Egg salad

Here's a good, easy to make egg salad recipe, and a method to keep the outsides of the egg yokes from greening while hard-boiling them.

Ingredients

  • 6 eggs
  • 1/2-2/3 cup mayo or Miracle Whip
  • 1/2 stalk celery, chopped
  • 1/4 cup white or sweet onion, finely chopped
  • 1 tsp paprika
  • 1 tsp dill

Directions

Peel and chop the hardboiled eggs and place them in a mixing bowl. Add mayo, celery, onion and mix thoroughly. mix in paprika and dill, refrigerate for 1 hour before serving.


Hard-boiling the Eggs

Hard-boiled eggs are sometimes distasteful because of the sulfur taste that you get if you boil them too long. A prefered method to cook them is to place your eggs in a sauce pan, cover them with water, and set to boil on the stove. Once you have a rolling boil, allow the eggs to boil for approximately 45 seconds then remove from heat and cover. Allow the eggs to sit in the boiled water for 12 minutes, then drain and flush with cold water.
