Fish tacos

Go buy like 2 pounds of fish. I used Sea Bass because it was on special but cod & halibut will grill up with roughly comparable texture.
Next make some pineapple salsa by mixing the following in a bowl:
- 1 14 oz can crushed pineapple, drained of juice (mix the juice with some rum and tie one on while you cook. This recipe is that easy.)
- 1 tablespoon of thai fish sauce
- 2 tablespoons of spicy Asian chilesauce (the red stuff with the garlic bits in it.)
- 2 tablespoons of brown sugar
- 3 or 4 finely chopped green onions
Mix that all up and give it a few hours or even overnight in the fridge to get the flavors working together.
Marinate the fish in Soy sauce, dry white wine and some pepper. The marinade really only needs like half an hour to do it's job so this is a good time to go clean off your nasty grill and drink another pineapple rum drink.
Grill the fish til it's firm but still juicy inside. Don't cry if it comes apart some when you take it off the grill, remember it's going in a taco here. Serve it on a tortilla with a dallop of the pineapple salsa and maybe a dash of chipotle pepper sauce.
