Gorgonzola Mushroom Sauce over Steak

Sounds daunting or elaborate perhaps, but it really only takes a few minutes to prepare.

Ingredients

  • gorgonzola cheese
  • mushrooms
  • shallot, sliced or red onion, sliced
  • thyme, chopped or rosemary, chopped
  • dry white wine
  • olive oil
  • sour cream
  • dijon mustard
  • salt
  • pepper
  • steak of choice


Cooking Tools

  • oven-safe skillet
  • sauce pan
  • oven


Preparation

Pre-heat oven to 350

Note: Someone suggested 450 for the oven for greater effect on the crust on the steak. I haven't tried this yet, but wanted to make note for anyone who would like to give it a try.


Directions

For the steak:

Season both sides of the meat with salt and pepper. Heat the olive oil in an oven-safe medium skillet over high heat. I usually use a cast iron skillet. When the oil is hot, Place the meat in the pan. Let it cook for a couple minutes until it browns, then turn over and do the same. The seasoning and the oil create a nice crust on both sides. That's what you see on the top of the steak in the image above. When both sides are browned place the skillet into the pre-heated oven. A few minutes in the oven and you pull out the skillet and remove the meat. Let it sit. Keep the meat in the oven longer if you prefer more well done steak.

For the sauce:

Heated olive oil in a pan, then throw in the sliced onion or shallot. After lightly browning the onion add a little wine and let it reduce. Combine gorgonzola cheese, thyme or rosemary, dijon mustard, sour cream, salt, and pepper. Let the cheese melt. Alternatively you could combine these in a blender or food processor to make a creamy mixture before adding to the onion/wine sauté.

Slice your steak and serve with the sauce drizzled atop.


Notes

One thing I like to do is use the drippings from the steak skillet to sauté cut vegetables. Deglaze the skillet with a little wine or some kind of stock. It's a great way to pick up that great flavor.
