Green Tomatillo Salsa

Ingredients

  • 1/2 lb tomatillos, husks removed and washed
  • 1/4 c. well-chopped cilantro
  • 2 whole scallions, roughly chopped
  • 2 fresh hot green chilles
  • 1 clove garlic (optional)
  • 1 tbsp fresh lime juice (optional)
  • 1/2 tsp salt or to taste

Directions

Put the whole tomatillos in a medium pan. Add about 2 cups water and bring to a boil. Cover, turn the heat down to medium-low, and simmer for 10 minutes. Lift the tomatillos out with a spoon (they will be full of water) and put them in a blender or food processor. Add the remaining ingredients and blend until you have a course puree
