Hawaiian Chicken

Note - My sister's family went nuts over this one, they have it twice a week, and she made it for a Lost watch party. Very tasty, and easy.

Ingredients

  • 1 (10 ounce or close) jar sweet and sour sauce
  • 1/4 cup up to 1 cup packed brown sugar
  • 1/2 cup orange juice
  • 4 tablespoons white wine or sake
  • 1/4 cup butter, melted
  • 1 can chunky pineapple (or fresh even)
  • 4-5 skinless, boneless chicken breasts (depends on size...enough to line the bottom of a 9x13 glass baking dish)

Directions

  1. Mix sweet and sour sauce, brown sugar, orange juice, white wine, and melted butter. Mix together well. May have chunks from the brown sugar, not a big deal though.
  2. Put chicken breasts in the greased 9 x 13 inch baking dish, and pour sauce over chicken. Then pour in the pineapple on top of it all.
  3. Bake for one hour at 350.
  4. Serve over white rice.

Variations

The pineapple is by choice, you can take it or leave it.

We found that 1 cup of brown sugar, while good, is a bit much, so adjust the brown sugar to taste. Especially use less if you also put in the pineapple juice. We use 1/4th cup brown sugar and the pineapple, and that is still quite good.

Also, my sister cuts up the chicken into smaller pieces and cooks for less time, so you can try that.
