Hippy Porkchops

Ingredients
- Pork Chops, boneless is easiest but not required
- Thyme
- Salt and Pepper
- 1 medium Onion
- 1 large Bell Pepper
- Olive Oil (2 tb or so)
Directions
- Put enough olive oil in a large skillet to coat the bottom, put it on mediumish heat so it starts to warm up.
- Take the thyme, and the salt and pepper (to taste) and rub all over the pork chops.
- Put chops in now warm skillet. Put on medium-high-ish heat.
- While that side of the chops are cooking, cut up the onion and bell pepper. Toss into skillet.
- Turn the chops.
- Cook until meat is done (cut into the largest chop to check).
If the chops finish and you aren't quite happy with the texture of the veggies, stir fry the veggies a bit longer after taking out the meat, or cut up the veggies ahead of time and put them in the skillet earlier.
