Lime Cilantro Rice

Ingredients
- 2 tablespoons butter
- 1 small yellow onion, cut into medium dice
- 4 cloves garlic, minced
- 2 cups long-grain white rice
- 3 1/2 vegetable stock
- 1/2 cup fresh lime juice
- 4 tablespoons grated lime zest
- salt and fresh pepper to taste
- chopped fresh cilantro
Directions
- Melt the butter in a medium-sized saucepan over medium heat
- Saute onion and garlic in the butter until onion is transparent
- Add the rice and stir it just enough to get it coated in the butter
- Add the stock, lime zest, and lime juice, salt and pepper and bring to a boil
- As soon as it boils, turn the heat down to low and cover the saucepan
- Cook until rice is tender and the liquid is absorbed (about 20 minutes)
- Remove pan from the heat and let sit, still covered, for five minutes
- Transfer the rice to a serving bowl and toss with the chopped cilantro
