Lime Cilantro Rice

Ingredients

  • 2 tablespoons butter
  • 1 small yellow onion, cut into medium dice
  • 4 cloves garlic, minced
  • 2 cups long-grain white rice
  • 3 1/2 vegetable stock
  • 1/2 cup fresh lime juice
  • 4 tablespoons grated lime zest
  • salt and fresh pepper to taste
  • chopped fresh cilantro

Directions

  1. Melt the butter in a medium-sized saucepan over medium heat
  2. Saute onion and garlic in the butter until onion is transparent
  3. Add the rice and stir it just enough to get it coated in the butter
  4. Add the stock, lime zest, and lime juice, salt and pepper and bring to a boil
  5. As soon as it boils, turn the heat down to low and cover the saucepan
  6. Cook until rice is tender and the liquid is absorbed (about 20 minutes)
  7. Remove pan from the heat and let sit, still covered, for five minutes
  8. Transfer the rice to a serving bowl and toss with the chopped cilantro
