Macaroni and Cheese Casserole

The greatest macaroni and cheese casserole, ever.

Ingredients

  • 1/2 pound any kind of elbows, shells, spirals or egg noodles.
  • 2-1/4 cups shredded cheese (9 ounces or so) -- mild white cheddar is good
  • 2 eggs
  • 1 cup milk
  • 1 tsp salt
  • Pepper
  • 2 tbsp butter or olive oil

Directions

  1. Preheat oven to 375° F.
  2. Cook noodles till not quite tender, about 10 minutes.
  3. Layer pasta and 2 cups of the cheese alternately in an oiled 2 quart casserole dish.
  4. Beat eggs with milk and seasoning and pour over noodles.
  5. Sprinkle with remaining cheese and dot with butter or drizzle with olive oil.
  6. Bake for 25 minutes, until eggs are set.
  7. Let stand 5 minutes; eat it.
