Mexican Glop

This recipe is not in any way intended to be authentic tex-mex food, but it's DAMN good.

Ingredients

  • 2 lb ground beef
  • 1 whole onion
  • 1 16 oz can of salsa (mild or medium preferred)
  • 1/2 lb? Velveeta (not sure of the size, but the smaller package. The large package is 2x as much)
  • dash of hot sauce (Cholula is a good choice here but if you can't get mexican hot sauce, tabasco or plain old cayenne pepper would work.)
  • ~2 doz flour tortillas.

Directions

  1. Chop onions and cube Velveeta before you start. Set Velveeta aside.
  2. Brown ground beef in a large dutch oven.
  3. Add onions and cook until onions are translucent.
  4. Turn heat to low and add salsa. Yes, the whole frigging jar.
  5. Begin adding Velveeta cubes while stirring and be mindful of the consistency. You may not need to add the whole amount of cheese, otherwise you may end up with a product more like very chunky queso compuesto. The goal is this should be a consistency you'd put into tortillas and eat like a taco or burrito.
  6. When you get to the desired consistency, add a few dashes of hot sauce.
  7. EAT.

Makes 5-6 servings.
