Oatmeal sugar cookies

Ingredients
Makes ~2 dozen cookies, adjust amounts as necessary.
- 1 cup butter
- 1½ cups flour
- 1 cup powdered sugar
- 1 cup oats (oatmeal)
- 2 tsp. vanilla
- ½ tsp. baking soda
Directions
- Mix all ingredients together thoroughly.[1]
- Roll into a log, ~2½" in diameter.
- Roll log in colored sugar, jimmies, or any topping you want.
- Wrap in wax paper and chill in the refrigerator until solid (an hour is usually plenty).
- Preheat oven to 325°F
- Slice log into approx ¼" thick cookies.[2]
- Bake for 15–20 minutes.
- Place on a cooling rack for 10 minutes.
- Enjoy!
[1] It will be very dry at first; just keep mixing until you get a solid mass. Mixing by hand works best.
[2] I find that using a serrated bread knife works best for this, as you need to "saw" the log; it's too dry to cut straight down, it'll just crumble.[[File:File:Example.jpg]]
