One-dish Chicken and Vegetables

Ingredients

  • 1 chicken breast, fresh or thawed
  • 1 cup brown rice
  • 1 cup frozen vegetables
  • 1.5 cups water
  • 1 tbsp unsalted low-fat butter spread
  • 1 tsp each of sage, thyme, black pepper
  • 2 tsp of rosemary, crushed (just crush between thumb and palm)

Directions

Toss everything but the vegetables into a pot, bring to a boil, reduce to low and simmer 15 minutes. Toss the veggies in for the last 5 minutes. I typically use carrots, onions, peppers, etc, all diced up.
