Oven-Fried Chicken Drumsticks

This was one of my favorite recipes growing up and have rediscovered it now that I've been cooking more. It is a healthier alternative to deep fried chicken.

Ingredients

  • 1 cup all purpose flour
  • 2 tsp. salt
  • 2 tsp. paprika
  • 1/4 tsp. paprika
  • 1 stick (1/2 cup) butter
  • 6 piece chicken drumsticks

I use Bleached All Purpose flour but Unbleached is probably fine, too. For butter I recommend real butter that is trans fat free. We are trying to be healthier than deep frying here. Margarine burns too easily so that is out.

Preparation

  1. Heat oven to 400 degrees.

Directions

  1. Mix flour, salt, pepper, and paprika in a plastic bag (I use a 1 quart zipper lock bag to make shaking easier)
  2. Place the stick of butter in a deep 9 x 13 pan (lined with aluminum foil for easier cleanup), and place in oven to melt. Keep checking it and swish the butter around as it melts. Remove from oven once the stick is mostly melted.
  3. Shake the chicken in the bag, remove and arrange in a single layer in the pan.
  4. Bake for 60 minutes, turning at 30 minutes.
  5. Enjoy!
