Phad Thai (Vegetarian)

Ingredients
- 12oz flat, rice-stick noodles
- 2 tablespoons peanut oil
- 3 eggs, lightly beaten
- 1 onion cut into thin wedges
- 2-3 cloves garlic, crushed
- 1 red bell pepper, thinly sliced
- 6 oz deep fried tofu puffs, cut into thin strips
- 6 spring onions, thinly sliced
- 1/2 cup fresh cilantro
- 1/4 cup soy sauce
- 2 tablespoons lime juice
- 1 tablespoon brown sugar
- 2 teaspoons sambal oelek (red chili sauce)
- 1 cup bean shoots
- 3 tablespoons chopped, roasted, unsalted peanuts or soy nuts
Directions
- Cook noodles according to directions on package
- Heat a wok over high heat and add enough peanut oil to coat bottom and side, when smoking, add the egg and swirl to form a thin omelette. cook for 30 seconds or until just set, roll up, remove and slice thinly
- Heat remaining oil in the wok. add the onion, garlic, red pepper and cook over high heat, 2-3 minutes, or until the onion softens. add noodles, tossing well. stir in omelette, tofu, spring onion and half the cilantro
- Pour in the combined soy sauce, lime juice, sugar, and sambal oelek, then toss to coat the noodles. sprinkle with bean shoots and top with roasted peanuts and remaining cilantro. serve immediately
