Pot Stickers (Vegetarian)

I've made well over 1000 of these in my life, and they are always a hit. Serve these with Peanut Dipping Sauce, for instance.

Ingredients

  • pot sticker wraps
  • 1/2 cup cooking sherry
  • 1 small minced onion
  • 1–2 cups thinly sliced purple cabbage
  • 2–4 cloves crushed garlic
  • 1 tbsp. minced ginger
  • 1–2 cups minced celery
  • 3 minced scallions
  • 4 tbsp. minced cilantro
  • 8 oz. button or crimini mushrooms. coarsely chopped
  • 3 tbsp soy sauce
  • 2 tsp. salt
  • peanut oil, sesame oil for frying pot stickers

Preparation

  1. Heat sherry in a wok or frying pan over medium heat. Stir fry onion and cabbage until limp.
  2. Add remaining pot-sticker ingredients. Cook, stirring for 2-3 minutes.
  3. Remove mix from heat and place in a colander to drain excess moisture.

Directions

  1. Use a wetted finger to wet the edge of each pot sticker wrap. Place a spoonful of mixture on each potsticker wrap, then fold over into a half moon shape. Pinch edges to seal.
  2. Heat a few tablespoons peanut and sesame oil in a large frying pan. Cook pot stickers until the bottoms are brown and crispy. Add 1/2 cup water to pan and tightly cover immediately. Let steam for a few minutes until tops are tender.
