Puttanesca Sauce (Vegetarian)

This is a tangy tomato sauce, and is good with a variety of pastas.
Ingredients
- 4-6 cloves garlic minced or thinly sliced
- 3/4 cup kalamata olives, chopped
- 1 tbsp capers, crushed
- 1 tsp green peppercorns in brine (optional)
- 1 tsp cracked red pepper
- 1/4 cup red wine, vegetable stock, or water
- 1 tbsp balsamic vinegar
- 28 oz. crushed tomatoes or Pomi
- 2 tbsp light miso
- 1 tsp dried oregano
- salt and fresh ground pepper to taste
- 1/2 bunch parsely, minced
Directions
- Saute the garlic in olive oil until slightly brown.
- Add olives, capers, peppercorns, red pepper and liquid. Stir for a few seconds.
- Add tomatoes and spices, and simmer for about 10 minutes.
- Blend the miso with a small amount of sauce in a bowl and mix in with the rest of the sauce.
- Stir in the parsley, and serve with the pasta of your choice.
