Puttanesca Sauce (Vegetarian)

This is a tangy tomato sauce, and is good with a variety of pastas.

Ingredients

  • 4-6 cloves garlic minced or thinly sliced
  • 3/4 cup kalamata olives, chopped
  • 1 tbsp capers, crushed
  • 1 tsp green peppercorns in brine (optional)
  • 1 tsp cracked red pepper
  • 1/4 cup red wine, vegetable stock, or water
  • 1 tbsp balsamic vinegar
  • 28 oz. crushed tomatoes or Pomi
  • 2 tbsp light miso
  • 1 tsp dried oregano
  • salt and fresh ground pepper to taste
  • 1/2 bunch parsely, minced

Directions

  1. Saute the garlic in olive oil until slightly brown.
  2. Add olives, capers, peppercorns, red pepper and liquid. Stir for a few seconds.
  3. Add tomatoes and spices, and simmer for about 10 minutes.
  4. Blend the miso with a small amount of sauce in a bowl and mix in with the rest of the sauce.
  5. Stir in the parsley, and serve with the pasta of your choice.
