San Francisco Chops

This is a quick, simple, delicious way to prepare pork chops.

Ingredients

  • 4 pork chops, about 1½ lbs (½ to ¾ inch thick)
  • 1 Tbsp oil
  • 1 clove garlic, minced

Sauce

  • 2 tsp oil
  • 4 Tbsp dry sherry or broth
  • 4 Tbsp soy sauce
  • 2 Tbsp brown sugar
  • ¼ tsp crushed red pepper flakes
  • 2 tsp cornstarch or flour
  • 2 Tbsp water

Directions

  1. Trim pork chops of fat, pound flat with tenderizing mallet if using boneless chops.
  2. Heat oil in skillet. Brown chops on both sides.
  3. Remove chops and add a little more oil to skillet if needed.
  4. Saute garlic for a minute, being careful not to burn it.
  5. Combine oil, sherry/broth, soy sauce, brown sugar and red pepper.
  6. Place chops in skillet. Pour sauce over them.
  7. Cover tightly. Simmer over low heat until chops are tender and cooked through, turning once. 30 to 35 minutes.
  8. Add a little water, 1 to 2 Tbsp, if needed to keep sauce from cooking down too much.
  9. Remove chops to platter.
  10. Stir in cornstarch/flour dissolved in water. Cook until thickened.
  11. Pour over chops and serve.

Notes

  • Good served with: Thin spaghetti or noodles tossed with butter and sauce, green salad with sliced cucumbers and dinner rolls.
