Sesame Green Beans

I usually serve this as a snacky finger food before a meal, but it would work fine as a side dish.

Ingredients

  • 2-3 cloves garlic, minced
  • 1" ginger, grated
  • 1/2 c. soy sauce
  • 1/4 c. sesame oil
  • 1 tsp mustard
  • 1 tbsp toasted sesame seeds
  • 1 bunch fresh green beens

The quantities here are a little loose, this recipe is fairly flexible. There should be enough marinade to pretty much cover whatever quantity of green beens you have. A little fresh ground pepper might be nice in the mix too.

Directions

Blanch the green beans. Combine all ingredients in a shallow, flat bottomed container and toss thoroughly. (Adjust the amount of soy sauce and oil if necessary, so that the beans are mostly covered.) Cover container and let marinate in refrigerator overnight, stirring occasionally.
