Spinach roll-ups

Spinach Roll-ups
Ingredients:
- 1/2 cup scallion finely chopped
- 1 egg
- 8 ounces Light Garden Vegetable cream cheese
- 1 cup feta cheese
- 10 ounces frozen chopped spinach thawed and drained
- 18 sheets phyllo dough
Directions:
Combine ingredients until well blended. Lay out 6 sheets of phyllo dough spread with butter or cooking spray between each layer. Place 1/3 of spinach mixture on dough. Fold in sides, roll. Score logs at 1 inch intervals. Can be frozen at this point. Thaw 1 hour covered with plastic wrap before baking. Bake at 375 degrees for 25 minutes.
