Tomato Bean Soup

In keeping with the super easy, this recipe takes 2 mins to throw together.

Ingredients

  • 1 can of black beans (I rinse them, but you don't have to)
  • 1 can of diced tomatoes with juice
  • 1/2 cup to 1 cup of frozen corn kernels
  • 2-3 cups of veggie broth/tomato juice
  • 1-2 teaspoons of roasted garlic (Trader Joes sells jars of these, they're awesome)
  • Salt and pepper to taste
  • Optional: dash of paprika and teensy bit of cayenne pepper

Directions

  1. Mix all ingredients in a large-ish saucepan.
  2. Heat up to serving temperature. Makes about 4 large bowls of soup.

One variation on this is adding 2 Tofurky italian sausages, cut up into small pieces. Tastes better if you fry them first, but they're precooked so you don't really need to. It makes the whole recipe a bit spicier, so cut back on the cayenne if you do this.
