Tomato Sauce (Basic)

This is my favorite tomato sauce recipe. It gives a nice tangy, sweet sauce. I use it all the time. It goes well over plain pasta, cooked al-dente, or eggplant parmesan, or in lasagna.

Ingredients

  • 3–4 large clove of garlic, finely sliced
  • 2 tablespoons olive oil
  • 1–2 small dried red chili, crumbled
  • 2 teaspoons dried oregano
  • three 14oz cans of Italian plum tomatoes
  • 1 tablespoon red wine vinegar
  • 1 handful of fresh basil, roughly chopped
  • salt and freshly ground black pepper
  • 2–3 tablespoons extra-virgin olive oil

Directions

  1. In a thick-bottomed pan gently cook the garlic with the olive oil, then add the chili, oregano and tomatoes. Mix gently, but do not break up the tomatoes as this will release the seeds. which will make the sauce slightly bitter.
  2. Bring to the boil and simmer gently for 1 hour.
  3. Add the vinegar, then sir and chop up the tomatoes in the sauce.
  4. Now add your fresh basil, season well to taste, and add 2-3 tablespoons of your best extra-virgin olive oil.
