Two beer chili

I don't normally use a recipe while cooking this, so it comes out different every time. Here's as close as I can figure it.


Ingredients

  • 2 bottles beer
  • 4 lbs ground beef, browned and drained
  • 1-2 large cans (28 oz) beans (whatever kind you like, I sometimes use black beans, but usually kidney beans), drained and rinsed
  • 3 large cans (28 oz) whole peeled tomatoes, drained
  • 4 bell peppers, coarsely chopped
  • 1/2 large jar jalapeno slices
  • 1 tsp garlic powder
  • 1 tbsp minced onion
  • 1 tbsp salt
  • 1/4 tsp black pepper
  • 8 tbsp chili powder
  • 3 tsp cumin
  • 1 tsp crushed red pepper
  • 4 tbsp unsweetened baking chocolate
  • your favorite hot sauce to desired heat (I like cholula, and I like it HOT)


Directions

  1. Open both beers. One will be added to the pot after browning the beef, the other is for drinking while cooking. :)
  2. Brown ground beef in large empty stock pot, drain, and return to pot.
  3. Add all ingredients to pot with meat and mix thoroughly. Cook on medium heat for at least 2 hours or until peppers are soft. Alternatively, you can make this in a crockpot by cooking on low for 8-10 hours.


I like to serve with sour cream and grated cheddar cheese.
