Vegetable Biryani

This is a little sketchy as I have never written this one down, just done it from memory. You can add meat if you want, instead of (or as well as) potatoes, and obviously substitute the vegetable stock with meat stock.

Ingredients

  • 2 large onions (chopped)
  • 1 tsp cumin
  • 1 tsp coriander (cilantro)
  • 1 tsp chili powder
  • 3-4 hard boiled eggs
  • 1" segment of ginger (cut into strips)
  • 200-250 g (~7-8.75 oz, or 1-1.25 cups) Basmati rice
  • Vegetable oil to suit
  • 2 tins chopped plum tomatoes (about 400g net weight each so the tins say)
  • 600 ml vegetable stock
  • 3 medium potatoes if wanted (chopped)

Directions

  1. If you want potatoes, start them boiling now
  2. Fry cumin, coriander, and chili powder over a low heat
  3. Add onions
  4. Add ginger strips
  5. When ginger is starting to brown add tomatoes and some stock and leave on low heat
  6. Fry rice at low-medium temp until it starts to cook and then have 400ml stock ready
  7. Add stock bit by bit until nearly cooked
  8. Mix fried rice (and drained potatoes if wanted) with your sauce in a suitable lidded dish and bake it at 200°C (392°F) for about 25 minutes
  9. Once baked you can add chopped boiled eggs, or halved boiled eggs if preferred

Serves 3-4 (dependent on portions)
