Vegetarian Chow

Ingredients

  • 1 cup frozen corn kernels (thawed ok too)
  • 1 can black beans (Drained and rinsed)
  • 1 can diced tomatoes
  • 1 cup to 1 can Rotel
  • 1 tsp. cumin
  • 1 tsp. salt (optional)
  • At least 1 cup shredded cheese (cheddar and/or jack is awesome)
  • 10-12 corn tortillas

Directions

  1. Set oven to 350
  2. Combine corn, beans, tomatoes, Rotel, cumin, and salt in a mixing bowl.
  3. In a lightly oiled 13 x 9 inch baking dish (spray stuff if fine), place 5-6 tortillas, cover with 1/2 of corn mixture, then half the cheese, repeat layers until ingredients are used up.
  4. Warm in oven for about 30-40 minutes until cheese is bubbly.

Serves 4 average folks or 2 super hungry folks.
