Vegetarian Stir Fry (Lame Version)

This is a pretty loose recipe, as I just sort of made it up on my own. You can adjust the amount of veggies, or what you choose to include, to your taste. Basically, the goal is to have veggies/tofu and rice in every bite. Mushrooms are good (I don't like them, but I have been told), for starters.

Ingredients

  • Rice (duh)
  • White/yellow onion
  • Broccoli (frozen or fresh works)
  • Bell pepper, your choice of color
  • Tofu
  • 1-2 large cloves of garlic
  • Frozen corn and/or peas and/or a mix of both
  • Vegetable oil (or your cooking oil of choice)
  • Soy/teriyaki sauce

Directions

  • Start cooking enough rice for however many servings you need. I usually cook this for myself, with 1 cup of rice to 2 cups of water
  • Pour enough oil into a pan to just coat the bottom. Use a small-medium pan, again depending on the serving size. I use a small pan for myself. Turn on medium to medium-high heat.
  • Chop up some onion, broccoli, pepper, and tofu into bite-sized pieces. Balance the ingredients as you'd like - I like a lot of onion and tofu, personally. Overall, you'll want enough to cover the bottom of the pan but not fill the pan up.
  • While chopping, toss a piece of onion into the pan. Once the onion starts to sizzle, add everything to the pan. Watch the heat, you want to hear sizzling, but not so much that things burn. Stir/toss every minute or two to promote even cooking.
  • Keep an eye on your rice. Remove from heat and let sit when the time comes. (You probably already know how to cook rice.)
  • Mince the clove(s) of garlic, but don't add them to the pan yet.
  • Cook the veggies/tofu until the onions start to turn translucent and the tofu starts to brown up. When this happens, add the corn/peas and garlic to the pan. I usually add enough corn/peas to barely cover the other veggies. The pan should be pretty full at this point. Stir/toss every minute or so until the corn and peas have warmed up and cooked a bit. Add salt/pepper to taste.
  • Once the corn/peas are cooked, add enough soy and/or teriyaki sauce to give everything a light brown color. Stir/toss to coat.
  • After a few minutes, you'll smell the soy/teriyaki cooking. Yum. Move the rice to a bowl/plate, and add the veggies/tofu and mix into the rice.
