Whole wheat banana bread

Ingredients

  • 1 cup whole wheat flour
  • 1/2 teaspoon baking soda
  • 1/8 teaspoon salt
  • 1/4 cup butter
  • 1/4 cup and 2 tablespoons brown sugar
  • 1 eggs, beaten
  • 1-1/2 cups mashed overripe bananas (approx 3 medium)

Directions

  1. Preheat oven to 350 degrees F (175 degrees C).
    Lightly grease a 9x5 inch loaf pan or 6 cupcake/muffin tins.
  2. In a large bowl, combine flour, baking soda and salt.
  3. In a separate bowl, cream together butter and brown sugar.
  4. Stir in eggs and mashed bananas until well blended. Stir banana mixture into flour mixture; Stir just to moisten. Pour batter into prepared pan/cups.
  5. Bake in preheated oven for 60 to 65 minutes (40 to 45 minutes in cupcake tins) until a toothpick insterted into center comes out clean.
  6. Let bread cool in pan for 10 minutes, then turn out onto a wire rack.
